At Valhalla I make the wines traditionally with a minimalist lo-fi approach.
In terms of winemaking - Small batch, single vineyard, open and barrel fermenting, hand plunging, basket pressing and a little foot stomping where appropriate.
I have the good fortune to work with some fantastic growers who gently tend the soil and vines in North East Victoria including the Beechworth, King Valley, Alpine Valleys & Rutherglen regions.
Riesling, Marsanne, Chardonnay, Rose, Pinot Noir, Tempranillo, Shiraz & Durif are all handcrafted in the winery in Beechworth. With over 600m in altitude difference between the vineyards I play with, the grapes are of really different personalities. I endeavour to respect to each grower, site and the diversity of expression that the regions of North East Victoria can grow.
