Winter 2015

Winter is the perfect time to spend some time with a glass of Valhalla Wines, it is a season to slow down and celebrate life's little luxuries. Tuck yourself up on the couch near a crackling fire and savour the expressive layers of our Grenache Shiraz Mourvedre with a good book and cheese platter, enjoy a seasonal wild mushroom risotto with our Shiraz or perhaps a slow cooked lamb shanks with gremolata served with our Durif.

Slow cooked casseroles, braised meats and long cooked stews match themselves to the abundance of flavours in a bottle of our wines. 

Winter is pruning time in the vineyard and with temperatures below zero overnight (with regular frosts) followed by lovely crisp days it sometimes seems that our vineyard is being pruned by strange strippers. As the day warms up you can see the layers of clothing being removed leading toward lunch and then back on during the afternoon as the sun comes down. The important role of pruning is helping the vine keep balance and setting the quality parameters of the vineyard for the coming growing season. The work done now, will pay off when we harvest the fruit in Autumn 2016.

In the winery, i have just finalised the blending of the 2014 red wines. A job that involved tasting the separate barrels and then deciding how over 50 different picks will come together into only a handful of wines. It is a job that appears glamorous, photo's with a line of glasses in front of you. But it takes serious attention to put together the flavours of several vineyards and varieties into exactly the right combination. It is an exciting time, the last few steps of a journey that started as small buds on the vines in September 2013, through the growing season to be harvested in March last year. Then fermented, plunged, pressed and put into barrel with love for over a year. You can imagine the possible variations that this many barrels offers. My job is to respect how each of our vineyards have expressed themselves and to help create the best possible flavour and textural combinations for each of our wines.

Our Lambs are growing quickly at the moment and the delight of the farm, it always brings a smile to see them frolicking in the paddock.

Valhalla Wines handcrafts its wines using natural vineyard practices, traditional winemaking techniques and careful cellaring in its straw bale winery.  Valhalla has been established with environmental sustainability as a core value of its business.

Varieties such as Viognier, Marsanne, Grenache, Shiraz and Durif are the heroes here, with the winemaker’s attention to detail creating wines of character.....wines with soul.  

The winery & cellar door can be found just 10 minutes from Rutherglen.
